Recipe of the Week
Gazpacho- Spanish Soup
3 medium size tomatoes, halved, seeded, diced
1 cup cucumber, peeled, seeded, diced
1/2 red bell pepper and 1/2 green bell pepper, seeded, diced
1 small red onion, peeled, diced
1 large garlic clove
1 slice of bread
2 1/2 cups of tomato juice
1/4 cup extra virgin olive oil
1/4 cup sherry wine vinegar
salt and pepper to taste

Summer is almost here; this a great, cold Spanish soup. Directions: Tear bread into small pieces, place all veggies in food processor and process till smooth, add all remaining ingredients, process again till smooth and chill.
